上海市某郊区农村民间厨师食品卫生和安全认知、态度和行为水平及影响因素分析

中文摘要: 目的 通过对上海市青浦区白鹤镇承办家宴的农村民间厨师进行食品卫生安全认知、态度和行为(KAP)状况进行调查,,分析其影响因素,为政府部门制定管理政策提供数据支持。方法 采用随机整群抽样的方法,随机抽取青浦区1个乡镇,以镇内符合条件的111名承办家宴的农村民间厨师作为研究对象,采取问卷调查的方式对其食品卫生安全认知、态度和行为状况进行调查分析。结果 农村民间厨师食品卫生和安全认知知晓率为68.41%,正确态度持有率为90.99%,食品健康行为形成率为70.16%。文化程度高、年龄较低和从业时间长是KAP的主要影响因素。结论 各部门应在政府的领导下,继续联动,加强农村民间厨师的监管和培训,同时加强对各村居委家宴场所的硬件投入。

Abstract:OBJECTIVE Through the investigation and analysis the influencing factors of food hygiene safety cognition, attitude and behavior (KAP) of the rural folk chefs in Baihe Town, Qingpu District of Shanghai, providing data support for the government departments to formulate management policies. METHODS Random cluster sampling method randomly selected one town of Qingpu District .The 111 rural folk chefs as the object of study that in the town in line with the conditions. Through the results of questionnaire survey, analyze their food hygiene and safety cognition, attitude and behavior. RESULT The cognition rate of food hygiene and safety awareness of rural folk chefs was 68.41%, the correct attitude was 90.99%, and the rate of food health behavior was 70.16%. High level of education , low age , long working hours , are the KAP main influencing factors. CONCLUSIONS All departments should continue under the leadership of the government, to strengthen the supervision and training of rural folk chefs. while strengthen the town feast place hardware investment .
