中文摘要: 目的:对深圳市宝安区发生的一起因食用流动摊档食物而引起亚硝酸盐中毒事件的原因进行调查和分析,探讨
预防控制措施,防范类似事件的再次发生。方法:采用现场流行病学调查、卫生学调查及实验室检测等方法溯源事件,分析
可能的污染环节。结果:患者最初临床症状以恶心、头晕、心慌等为主,后出现呕吐、乏力、紫绀等症状,发病潜伏期约为
45 min,使用亚甲蓝治疗后患者症状缓解,发绀消失。流动摊档多种调味品中检出亚硝酸盐,患者的洗胃液及尿液中亦检出
亚硝酸盐。结论:该起事件为亚硝酸盐导致的食物中毒事件,有关部门应加强对流动摊档和食品添加剂使用的监管,特别是
加强对亚硝酸盐的生产、流通等环节的监管力度;对从事食品行业的特定从业人员开展亚硝酸盐相关知识的宣教工作。
Abstract:OBJECTIVE To investigate and analyze the cause of the food poisoning incident in the itinerant stall by nitrite in or⁃
der to provide evidence for taking effective measures of prevention and control and to prevent similar events. METHODS The field
epidemiological investigation, a hygiene survey and laboratory detection was carried out through trace-back studies and analyzed the
possibility of pollution. RESULTS The main Clinical symptoms were nausea, dizziness and diarrhea followed by vomiting, weakness
and cyanosis, the incubation period was 45 minutes.They were quickly relieved after treatment with methylene blue. The nitrite was
detected in different condiment and also detected in the gastric juice and urine of the patient. CONCLUSION It was identified as a
food-borne nitrite poisoning incident. The relevant departments should strengthen the supervision of the itinerant stalls and supervi⁃
sion of food additives especially for the nitrite. The nitrite knowledge education of the food safety should be strengthened to specific
employees who engaged in the food industry.
