秦巴山区农村居民膳食健康行为调查分析*

中文摘要: 目的 了解秦巴山区农村居民的膳食健康行为特征,为健康扶贫、精准扶贫提供科学依据。方法 采用分层整群随机抽样方法,对289名秦巴山区农村居民进行问卷和访谈调查。结果 调查秦巴山区农村居民289名,78.9%的调查对象每天食用早餐,早餐以粮谷类为主;8.7%的调查对象每天摄入蛋类;49.5%的调查对象每天或经常食用豆制品;81.7%的调查对象经常食用的肉类食物为腌肉;每天食用盐的摄入量在6 g以上和随口味增加的占69.5%。56.0%的调查对象每天或经常食用泡菜。结论 应加强营养健康知识宣教,减少盐的摄入量,增加豆类食物,提倡食用新鲜肉类,减少腌肉泡菜的食用频率,改善饮食结构,增强居民的抗病能力,促进秦巴山区农村居民的健康水平。
Abstract:OBJECTIVE To understand the dietary health behavior characteristics of rural residents in Qinba Mountain Area of Sichuan, and to provide scientific evidence for health poverty alleviation and precision poverty alleviation. METHODS A stratified cluster random sampling method was used to conduct questionnaires and interviews on 289 rural residents in Qinba Mountain Area. RESULTS A total of 289 rural residents were surveyed in Qinba Mountain Area. 78.9% of the respondents consumed breakfast every day. The breakfast was mainly cereals; 8.7% of the people consumed eggs every day; 49.5% of the people consumed soy products daily or regularly; 81.7% of the respondents regularly consumeD meat for bacon; the edible salt was more than 6g per day and increases with the taste by 69.5%; 56.0% of the people ate kimchi daily or often. CONCLUSION Strengthening nutrition and health knowledge and education, reducing salt intake, increasing legumes, promoting consumption of fresh meat, reducing the frequency of pickled kimchi, improving dietary structure, enhancing residents’ disease resistance, and promoting the health level of rural residents in Qinba Mountain Area.
